Kim’s Famous Ice Cream Pie.

Okay so I’m not famous but I would like to toot my own horn by saying I make an amazing pie!!! I never make the same pie twice and always try to find new and yummy ways to serve it up! This one is made with a chocolate base, chocolate frozen yogurt, mars chocolate bars, and chocolate sauce.

Oreo baking crumbs
1/2 cup of butter
Choice of ice cream or frozen yogurt
Candy or treats (I used 4 Mars chocolate bars)

Combine 2 1/2 cups of Oreo baking with 1/2 cup of melted butter. Press into deep dish pie plate. Chop candy of choice and spread some across the base. Add some frozen yogurt or ice cream add some more candy and another layer of frozen yogurt or ice cream. Top with candy and chocolate sauce. Wrap and place in freezer until ready to serve! Your guests will think you worked so hard on something that took about 15 minutes to make ๐Ÿ™‚

1/2 red onion
1/4 cup feta cheese
1/4 cup kalamata olives

Cut all ingredients into small pieces and mix together.

1/4 cup light olive oil

Mix dressing really well and pour onto salad. Let sit in fridge a few hours and serve!

Homemade Whole Wheat Tortillas

I am so excited that these turned out. I love reading tortilla labels in the store with ingredients that I’m not exactly sure what they are. With only 4 ingredients I know exactly what I am eating.

-2 cups whole wheat flour
-3tbsp extra virgin olive oil
-3/4 tsp salt
-2/3 cup warm water

– In a bowl mix flour and salt
– Add oil and stir
– Slowly add the warm water until the dough comes together. (Add a little extra if needed).
– Put the dough on the counter and knead for 2 minutes.
– Cut the dough into 8 pieces and turn them into balls
– Let the balls sit for 20 minutes to rest
– Roll each ball into a thin circle with a rolling pin
– heat a pan over medium high heat and give a little spray of cooking spray
– place a circle into the pan and cook until bubbles form
– flip and cook another minute
– eat right away or store in an airtight container in the fridge or freezer

85 calories for one wrap.
